To get the best flavor and color, it's important to cook the onions slowly and take your time.
The soup is served with a toasted baguette slice and melted Gruyère cheese on top, creating a delicious mix of textures and flavors. The soup's complexity comes from balancing sweet and tangy onions and creamy, nutty cheese.

- Melt the butter in a large pot.
- Add the onions and salt, and begin to sweat covered.
- Once the onions are soft, remove lid, turn up heat and caramelize.
- When the onions are golden brown, add the Calvados and reduce to almost au sec or until nearly dry and over 50% reduced.
- Add the chicken stock and bring to a boil. Cook for 10-15 minutes.
- Portion the soup into individual gratin dishes over a slice of toasted baguette and cover the top with grated cheese.
- Place into the broiler to melt. Carefully watching so that the cheese does not burn. Remove from once cheese has started to bubble.
- Remove from oven and let cool to enjoy.
